Edwin Zoe has dedicated his life to perfecting the art of noodle-making. As the owner and head chef at Zoe Ma Ma and Dragonfly Noodle in Boulder, he brings his passion for traditional Chinese cuisine to every bowl of noodles he serves.
Born in Taiwan, Edwin grew up working in his parent’s restaurants across Washington, D.C. and the Midwest, starting as a coat-check boy earning 25 cents per coat and eventually mastering every kitchen station. After college, he briefly ran a software company, but the passing of his father led him to pivot back to his roots. In 2010, he opened Zoe Ma Ma in Boulder with his mother, offering the traditional Chinese dishes he had grown up with. In 2022, Edwin was named a semi-finalist for the James Beard Award for Best Restaurateur.
Expanding his culinary footprint, Edwin opened a second Zoe Ma Ma location near Denver’s Union Station in 2014. Shortly after, he launched Chimera, which is now Dragonfly Noodle, a sister restaurant to Zoe Ma Ma, with a focus on Pacific Rim-inspired dishes that combine traditional flavors with modern, creative twists.
