Blackbelly began as Chef Hosea Rosenberg’s boutique catering company in Boulder, Colorado, featuring a food truck and farm. It evolved into a full-service restaurant, bar, butcher shop, and market, opening to critical acclaim in 2014. Blackbelly is Boulder’s only whole-animal, artisanal butcher shop and the first independent retailer licensed to produce and sell its own cured and fermented meats. In 2017, Rosenberg expanded his culinary ventures with Santo, a restaurant inspired by the cuisine of his childhood in Taos, New Mexico. In March 2024, he launched Blackbelly Market Denver, a smaller outpost focusing on a daytime deli, market, and an in-house meat curing program, with a special emphasis on house-made charcuterie.
Central to Rosenberg’s operations is a commitment to working closely with local ranchers and farmers to source the finest ingredients from Colorado and nearby regions. Chef Hosea’s numerous accolades include winning Bravo TV’s Top Chef Season 5, being named Hero of the Year by Conscious Alliance, receiving the Outstanding Philanthropist award from the Colorado Restaurant Association, and being recognized by the U.S. Small Business Administration for inspiring entrepreneurial spirit. His establishments were honored by the Michelin Guide in 2023 and 2024, with Blackbelly receiving a Green Star for sustainable gastronomy and both Blackbelly and Santo earning Michelin recommendations for their quality ingredients, chef-driven menus, and dedication to excellence.
